From 20 to 22 November 2026, the historic centre of Impruneta will come alive with the much-anticipated Peposo Day, the food festival celebrating the famous Peposo all’Imprunetina, the dish that symbolises Impruneta’s culinary tradition.
The programme is currently being finalised, but the following events are already planned:
Friday 20 November 2026: the first evening will open with an inaugural conference dedicated to exploring the history and traditional recipe of peposo.
Saturday 21 and Sunday 22 November 2026: the following two days will follow the format of previous editions, featuring social events including a Peposo-themed dinner on Saturday evening and, the following day, tastings, takeaway sales and the eagerly awaited Peposo Competition between the districts, in which the four districts (Fornaci, Pallò, Sant’Antonio, Sante Marie) will compete in the preparation of this speciality.
Peposo all’Imprunetina, also known as Peposo alla Fornacina, has medieval origins and is historically linked to the master kiln-builders. Its fame grew during the Renaissance thanks to Filippo Brunelleschi, who discovered it in a kiln in Impruneta. The recipe, which involves slow-cooking meat with wine and spices, is an important testament to the local culinary culture. The Municipality of Impruneta invites residents and tourists alike to take part in this culinary tradition, which combines authentic flavours, cultural events and moments of conviviality.
